How did this come to pass? Well, it’s quite simple actually, it all comes down to what, precisely, scampi is.
Scampi, as it turns out, is the name given to Nephrops Norvegicus, otherwise known as the Norway lobster. But in the US it’s also the common name for shrimp when served as part of Italian-American food in the states. British Scampi appears to be served as a form of fish-and-chips, with the Nephrops Norvegicus being served battered and fried. Ultimately though, we think we’d have to argue that the American Scampi is the superior form. When it includes shrimp, garlic, butter, and wine, how could you possibly go wrong?

Shrimp Scampi recipe
Shrimp Scampi is incredibly simple, when you cut it down to it’s base ingredients, and it doesn’t take long to make! Just start with these basic ingredients.
- 1 pd of cleaned shell-free jumbo shrimp
- Salt and Freshly Ground Peppercorns
- 2 t butter
- ¼ c white wine of preference
- ¼ t lemon zest
- 1 T lemon juice
- 2 t parsley, chopped fine
Simply arrange the shrimp in a small pan so they’re flat and spaced evenly throughout. In a skillet, melt down the butter until it’s fully melted, and then sprinkle the shrimp with salt and pepper before placing it in the pan. Let them cook for a full minute and flip them over, before cooking two more minutes. Remove them from the heat and place them in the bowl.
Pour in the white wine and the lemon juice, and bring it to a boil, letting it simmer until it thickens and stir the pan to deglaze it. Then stir in the zest of the lemon and the chopped parsley and pour the results over the shrimp! Voila, delicious shrimp scampi!
